Beat egg white in small bowl of electric mixer until stiff but not dry. Add brown sugar gradually. Continue beating about 3 minutes longer. Fold in vanilla, 1/2 cup chopped peans and 1/4 cup carob chips.
Drop rounded spoonfuls onto parchment paper on ungreased cookie sheets. Place a few pieces of chopped pecans and 5 carob chips on each.
Bake at 300 degrees about 25 minutes. Store in covered container.
