Olive Oil Chocolate Chip Cookies

Ingredients
- 1/3 cup olive oil
- 1 tsp vanilla extract
- 1 egg
- 2 tbsp flaxseed meal
- 3/4 cup Chatfield's® Date Sugar
- 1 cup garbanzo flour
- 1/2 tsp baking soda
- 3/4 cup Chatfield's® Semi-Sweet Chocolate Chips
- Himalayan sea salt

Instructions
- Pre-heat the oven to 350 degrees and line a baking tray with parchment paper.
- In a large bowl, combine the wet ingredients. Add the olive oil, egg, flaxseed meal, vanilla, and sugar and fold with a spatula.
- Place the dry ingredients into the bowl, add the garbanzo flour, and baking soda. Fold until the consistency becomes dense. Add in the chocolate chips.
- With rubber gloves on, form the dough into balls and flatten onto the baking tray. Sprinkle Himalayan salt on top, and bake for about 10-15 minutes.
