Carob Sandwich Cookies with Almond Filling

Ingredients
Cookie Dough
- 2 cup all-purpose flour
- 1/3 cup Chatfield’s® Carob Powder
- 3/4 salt
- 3 eggs
- 1 tsp vanilla extract
- 3/4 cup honey
- 4 tbsp butter
Filling
- 1 8 oz. can/tube almond paste
- 3 tbsp milk
- 2 tbsp Chatfield’s® Carob Powder
- 3 tbsp honey

Instructions
- Combine flour, carob powder and salt. Mix in eggs, vanilla, honey and butter. Blend well.
- Chill for 1 to 2 hours or until able to handle. Roll out and cut into circles.
- Place on greased cookie sheet and bake in 325 degree oven for 8 to 10 minutes. Remove from oven and cool on wire rack.
- For filling mash almond paste in medium size bowl with potato masher until soft, add milk, carob powder and honey.
- Mix. Chill. Spread an even amount of filling in between 2 cookies.
