Chocolate Oat Crumb Bars

Ingredients
- 1/2 cup Chatfield's® Semi-Sweet Chocolate Chips
- 1/3 cup unsweetened coconut cream
- 1 cup whole wheat pastry flour
- 1/2 cup muesli cereal
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp fine sea salt
- 1/2 cup brown coconut sugar
- 1/4 cup melted coconut oil
- 1 tsp pure vanilla extract

- 2 tsp vegan butter

Instructions
- In a saucepan on low heat, melt Chatfield's® Semi-Sweet Chocolate Chips with coconut cream until smooth. Set aside.
- Preheat oven to 350F. Grease a 9x9 silicone pan with coconut oil.
- In a large bowl, mix flour, 1/2 cup oats, baking powder, baking soda, and salt together.
- In a small bowl, combine the brown coconut sugar, oil, and vanilla extract. Pour into the larger bowl and mix all ingredients until smooth.
- Take 1/2 cup of the batter and set aside for the topping.
- Press dough firmly into prepared pan. Pour the chocolate spread over and spread out evenly.
- In a bowl, mix the 1/2 cup reserved batter with 2 tbsp muesli cereal and vegan butter. Crumble with fingers and sprinkle over the top of the chocolate layer.
- Bake for 20 minutes. Let cool before cutting into bars otherwise they'll fall apart. Enjoy!
