  1. Melt butter on medium heat. Stir in carob powder till dissolved. Stir in sugar and milk and bring to a boil. Remove from heat and add vanilla, peanut butter, oats and nuts. Stir till combined and put in 9x9" square dish, spreading out evenly. Cover with plastic wrap and freeze for 30 minutes. Cut into squares and store in plastic container in freezer or refrigerator (they soften very quickly if frozen).
  2. Variations: Boil the carob mixture for 3 minutes, stirring constantly before adding remaining ingredients. Drop on wax paper to make traditional 'no bake' cookies instead of candy. It is also unnecessary to freeze them since the sugar will cause them to harden. 1/3 cup honey in place of sugar; decrease milk to 1/4 cup. 1 teaspoon stevia instead of sugar. Adjust accroding to the strength of stevia used. Be aware that it will taste much sweeter after it has been frozen. Rice, soy or almond milk for those with milk intolerance. For a crunchier 'granola bar' consistency, substitute a cup or more of the oats with granola. NOTE: When you use a milk substitute and stevia, you have a delicious dairy, sugar and gulten free dessert!
