Question – Why are eggs needed in most baking recipes?

Pat: Eggs bind ingredients together and add moisture. In general, when baking, I find that recipes omitting eggs wind up being very dry and crumbly. If you were to omit eggs you would need to find a replacement for them. A ripe banana or flaxseed egg are both great replacements. Baking is all about ingredients working together & leaving something out without replacing it rarely works.
