Olive Oil Chocolate Chip Cookies
  1. Pre-heat the oven to 350 degrees and line a baking tray with parchment paper.
  2. In a large bowl, combine the wet ingredients. Add the olive oil, egg, flaxseed meal, vanilla, and sugar and fold with a spatula.
  3. Place the dry ingredients into the bowl, add the garbanzo flour, and baking soda. Fold until the consistency becomes dense. Add in the chocolate chips.
  4. With rubber gloves on, form the dough into balls and flatten onto the baking tray. Sprinkle Himalayan salt on top, and bake for about 10-15 minutes.
