In a medium nonstick skillet over medium-high heat, melt a tbsp of coconut oil. Place tortillas on skillet and cover ½ of each tortilla with carob chips.
Melt carob for about 4 minutes. Once carob is melted to the point where chip formations are barely visible and tortillas have achieved a golden-brown color, add a handful of marshmallows. Fry for another minute.
Remove s’mores tortillas and fold each in half.
Dust with powdered sugar (optional) and serve immediately.
